Recipe: Baby marrow and brie soup

I can’t recommend this simple recipe enough. It is so quick and easy and absolutely delicious!

Baby marrow and brie soup

  • Servings: 3-4

  • 400g baby marrows, sliced
  • 250g peeled potatoes, sliced
  • 40g butter
  • 1 tablespoon oil
  • 1 stock cube, dissolved in 650ml water
  • 65g brie
  • salt and pepper to taste


  1. Saute baby marrow and potatoes in butter and oil.
  2. Add stock and simmer until tender.
  3. Blend with hand blender.
  4. Before serving, reheat and add diced brie (you can remove the rind if you like)
  5. Add salt and pepper to taste.
  6. Decorate with a swirl of cream.
